Chesnut Summer Garden Makes One-Dish Dinner

AT-HOME ACTION: Instead of going to the fridge to see what’s for dinner, how about going out to the garden? Here’s a simple 5-ingredient dish that Chesnut Garden supplied last week for one Chesnut family (more on Chesnut’s gardenshare in a later post).

Middle Eastern Skillet (just as delicious without the meat for
a vegetarian option)
  • 2 cups squash (zucchini, summer squash) in 1-inch cubes
  • 2 cups chopped tomatoes
  • 1/2 cup chopped mint
  • 1 cup rice
  • 1 pound ground meat (sausage, lamb, pork, beef)
1. Sauté meat to brown in a large saucepan.
2. Add remaining ingredients with 1 to 2 cups water
(enough to cover meat and veggies).
3. Bring to boil, lower to simmer and cover. 
Simmer about 45 minutes, until cooked through.
Serves 4
